Paita is the capital of the province with the same name, which is one of the 8 provinces that are part of the department of Piura. At the territory that covers the province, close to the mouth of the Chira river, were settled the first human groups of the region, developing for centuries until communities and populated places were established, among the ones stand out the tallan ethnic group. As Paita is a port city and of ancestral marine tradition, the main dishes of the gastronomy are made of fish and other sea species.
Caballa pasada por agua caliente
The mackerell is cleaned to be boiled for 5 minutes. Once it's ready, you add a sauce of chilly pepper, onion, tomato, coriander, lemon juice, salt and oil. It's served with boiled manioc and sliced fried banana.
The preparation of this dish doesn't vary a lot from the one of other coast cities. To cook it, you boil fish slices in lemon juice, all of it with onions, salt, chilly peppers and coriander. Once that is ready, it's served with potatoes and a lettuce leaf.
Tortilla de raya
This ray omelette is made cleaning well the ray and leaving it in water 24 hours, before preparing it. When it's ready the fish pass through hot water and then is put in a bowl of eggs onions and other spices. You mix up all the ingredients and put them in a frying pan with oil, until it's crunchy and gold-colored. Enjoy it as with the side dish that you prefer.
Sudado de pescado
In the preparation of this dish, you take the fish cut in slices, seasoned with salt and pepper. Then you put them in a dressing of chilly pepper, garlic, tomato and onions. The combination is boiled in a closed pot for 10 minutes, and you add coriander and a chilly pepper. And you wait until the steam cooks it. Enjoy it with a boiled manioc and rice. Something just exquisite!!
This nourishing dish is made of fishes and shellfishes. First you fry the slices of fish with onion, garlic, tomato, chilly pepper and the spices. Then you add some wine and leave it cook for 5 minutes. And afterwards you put it in a soup of fish heads and mussels. At the end it's served with shellfish, mussels, with lemon, salt and pepper.

Paita by train
There isn't nowadays a train to get to Piura. There was long time ago (around 1900 a railway that covered the distance from Paita to Piura.
Paita by flight
Paita does not have its own airport, but the closest airport is the one located in the city of Piura, at 32,7 mi (52,7 km), which take about 45 minutes to go across. The airport receives from Lima approximately 4 flights a day, provided by the airlines Avianca and Peruvian Airlines. The flight from Lima to Paita takes about 1h and 40 minutes.
Paita by bus
To get to Paita is quite easy and takes little time if you travel from any of the districts and provinces of the Piura department. To travel from Lima you can contract the services of the bus company Civa, with the services of Econociva and Superciva. The time of travel lasts about 17 hours, boarding in a bus from 5:00 p.m. to 6:00 p.m. The price of the bus tickets goes from s/ 50 to s/ 100 (the prices are a reference, it depends on the season).
